I think Cap's greatest power is what he stands for and his belief in that. I know that sounds kind of corny, but thats why I like Cap. I honestly think that would propell him to win (assuming its just hand to hand)

The onlt reason how captain america could beat Bruce is because the super soldier serium in Steve allows his to have beyond superhuman stamina in other words he doesn't get tired. So a long lasting fight would be in favor of captain america
